If you remove the molding you still have to leave the gap between any solid or stationary object such as door trim cut the trim and slide the laminate under this , cabinets, sill plate, dry wall etc.

The spacers were designed to but to baseboard, you've removed that so if you wanted to cut 1/2" material and place it against the sill plate and then add your 1/4" spacer or just use 1/2" material and but to that as long as Sheetrock is consistently above height of laminate.

Another option is t o run the laminate all the way in to the sill plate . Do a 1/2 dozen rows and stop. Slide out the laminate going flush with the walls and use several nails , nailed into the sub floor as stoppers and then proceed.
